For our Shimmy Champagne only the best handpicked grapes are used, placed in baskets not bigger that 5 kg to ensure that the best grapes are transported to the press undamaged and ready to be pressed. For our Champagne we only use the free run juice, after the fermentation proses the temperature-controlled Champagne is placed into oak barrels.
In order to get the perfect taste out of our champagne that makes Shimmy Champagne so unique and special we use 100% Pinot Meunier.
The Cuvee is stored for 24 months in bottles to enhance the fine earthy fruitiness and ensure that Shimmy Champagne has the classical biscuit tone.
Shimmy is a ballroom dance that emerged from the Foxtrot, which was created around 1918 in the USA and came to Europe in 1920.
With the spread of jazz, this dance style also developed as Shimmy-sha-wabble or Hootchy-Kootchy (from "to cooch" = shake your ass), shaking all the limbs of your body.
When dance arrived in Europe around 1920, French dance teachers gave it more modest dance figures. Here the shimmy then replaced the fashion dance jazz which had been popular until then.
